Let’s go bananas with Banana Pancakes!

Here is a very simple recipe for your weekend breakfast pancakes.pancake3

Ingredients

½ cup all-purpose flour

3 ripe bananas

1 table spoon sugar (optional depending on the extent of your sweet tooth)

1 teaspoon baking powder

¼ teaspoon salt

1 egg (beaten)

½ cup milk

Directions

  1. Mix flour, sugar, baking powder and salt.
  2. Chop up your bananas and throw them in a blender and blend until smooth.
  3. In a separate bowl, mix together the egg, milk, and the blended banana paste.
  4. Stir flour mixture into the banana mixture.
  5. Heat a lightly oiled frying pan over medium heat and start cooking your pancakes to your likeness – thick or thin, small or large. It’s all up to you.
  6. Cook until pancakes are golden brown on both sides
  7. You can garnish with a fruit of your choice or whipped cream and enjoy.

PS: To avoid dirtying up a number of dishes, I just throw everything into the blender and blend away until it becomes one smooth batter!
