Ninive’s Fattoush Salad
This classic mezze from the Middle East is served with a fresh new twist by adding sweet and crunchy green apples to the cucumber, tomato, lettuce and pomegranate mix.
Tashreeb
This is an Iraqi dish consisting of braised lamb shoulder that’s cooked for seven hours in a bouquet of spices such as cumin, turmeric, nutmeg, coriander, ginger and cardamom. The tender meat is served with a splash of lime juice, chickpeas and paratha bread.
Maast o Khiar
A delicious appetizer, this yogurt-based dip is served with mint and cucumber. Sprinkled with walnuts and green grapes, it’s simply perfect on warm pita bread.

Beef Fatayer
This is a beautifully executed dish made with minced beef, onion, garlic, fresh chopped chili, coriander, cinnamon, pine seeds and raisin.
Manti
These Turkish dumplings, or ravioli, are divine. Served with a garlic-yogurt sauce and Aleppo pepper, they are one of the chef’s favorites.
